Ya know, it really rots to have to wait months to find out if the damned cheese is right or not. There isn't any sure fire way to know today if my entire day was wasted or not. Grrrr. The curds looked and smelled just fine but will the texture be right in 3, 6, or even 12 months? Go figure..... Flavor might be good. Or not.
I will try not to stress about the end result. It just irks me to know how to do something so damned well and be forced to relearn it cause my kitchen and a stainless steel pot isn't good enough.

Tonight was a full out winter gear kinda night. Snow pants didn't even keep all the cold at bay. We survived milking but it would have been nice to stay inside by the woodstove. Rumor has it that it will be around 50 again by Monday.
I'm not certain that is good news.
